i felt very strongly about rice crispy treats the other day. and i said to myself, 'self, just make some.' duh. (regular rice crispy cereal and premade treats are not usually gf, because of malt.) (thanks for letting me know, jo.)
there are, however, lots of rice crispy cereals that are gf. and most marshmallows are both gf and df. (remember that that arent vegetarian though, if thats how you roll.) so if i bought a gf rice cereal, marshmallows, and used not-butter butter, i could have some gf/df treats.
1. melt the not-butter butter. (i used smart balance.)
3. melt-ah, melt-ah, melt-ah (name that movie reference. heres a hint, the actual lyrics are 'toucha toucha, touch me, i want to be dirty'.)
4. add the cereal. i used barabaras. most gf rice cereal is made with brown rice. i prefer white for this application, but it wasnt bad.
5. mix mix, spread in pan, put in the fridge.
(measurements: one bag marshmallows, 1/4 cup not-butter butter, one box cereal, one tsp vanilla.)
this morning i had oatmeal with vanilla coconut milk, pumpkin, cinnamon, peanut butter, brown sugar and a drizzle of honey.
it was okay. for some reason it didnt hit the spot like i had hoped. that seems to be happening an awful lot since i had to change my diet.
thoughts?
oh, and if rice crispy treats didnt make you happy enough, heres a picture of a cute cat- one of my kitties, Mac. (the other one is named PC. they are twinkies.)
I'm dying to know what those taste like. I might try the recipe just to see. Tell your twinkies I said hi :)
