Gluten Free Rice Flour Pancakes
(slightly adapted from Rice Flour Pancakes Recipe)
1 cup rice flour
2 tbls sugar
2 tsp baking powder
1/2 tsp salt
1 egg, lightly beaten
1 cup milk (or nondairy milk of choice)
1 tbls melted butter
method: combine all ingredients until batter is smooth. pour into hot oiled pan with a 1/8th measuring cup. cook until set and flip carefully. makes about 9 pancakes.
pro tip: these make amazing "sandwiches" with an egg and sausage patty between two!
