Pancakes!

my husband has begged for breakfast for dinner since last time we had breakfast for dinner. well, last night, i provided.
(drumroll)
pumpkin cinnamon roll pancakes.
(with spam and eggs. dont hate.)
in the place of oil in pamelas pancake mix, i added pumpkin. it called for two tablespoons of oil, so i used two tablespoons of pumpkin. then i just combined not-butter, brown sugar, cinnamon, and pumpkin spice in a baggie and cut the corner off like a piping bag.
then i did this.
easy peasy. the butter cinnamon mixture melt down in there (and all up in the pan- watch for burning). then you flip it (carefully!), finish cooking it, and keep it warm in the oven at 200 degrees.
also, fight off husband. he will try to steal it.
the batter wasnt overly sweet or pumpkin-y. the filling could have been sweeter, but the hubby really wanted to make use of the maple syrup i finally bought. it worked out so that even though it was carb heavy, we didnt faint from high blood sugar. this is definitely a christmas morning type special breakfast. especially if you used a cream cheese frosting-type drizzle instead of syrup...just a thought.
they were fun to make. and oh man did they taste good. pumpkin-y, spicy.
(here are our twinkies. they werent into the pancakes.)
